New York Style Pizza Dough

A lower-hydration, bread-flour dough with a touch of oil and sugar. Produces a chewy, foldable crust that holds up to generous toppings.

Original NY style dough recipe

Ingredients

  • 500 g Bread flour
  • 300 ml Water (lukewarm)
  • 2 tbsp Olive oil
  • 1 tsp Sugar
  • 10 g Fine sea salt
  • 7 g Active dry yeast

Directions

    Dissolve yeast and sugar in lukewarm water. Let stand 5–10 minutes until foamy.
  2. 2.
    Combine bread flour and salt. Add yeast mixture and olive oil. Mix until a dough forms.
  3. 3.
    Knead 8–10 minutes until smooth. The dough should be slightly tacky but not sticky.
  4. 4.
    Divide into 2 balls. Place in oiled containers, cover, and refrigerate 24–48 hours.
  5. 5.
    Remove 1–2 hours before use to warm up. The dough should stretch easily without snapping back.
