New York Style Pizza Dough
A lower-hydration, bread-flour dough with a touch of oil and sugar. Produces a chewy, foldable crust that holds up to generous toppings.
Original NY style dough recipe
Ingredients
- 500 g Bread flour
- 300 ml Water (lukewarm)
- 2 tbsp Olive oil
- 1 tsp Sugar
- 10 g Fine sea salt
- 7 g Active dry yeast
Directions
- 1.Dissolve yeast and sugar in lukewarm water. Let stand 5–10 minutes until foamy.
- 2.Combine bread flour and salt. Add yeast mixture and olive oil. Mix until a dough forms.
- 3.Knead 8–10 minutes until smooth. The dough should be slightly tacky but not sticky.
- 4.Divide into 2 balls. Place in oiled containers, cover, and refrigerate 24–48 hours.
- 5.Remove 1–2 hours before use to warm up. The dough should stretch easily without snapping back.
