St. Louis Style Pizza
St. Louis-style pizza descends from Chicago tavern style but goes further: an unleavened cracker crust, Provel processed cheese blend (a St. Louis original), and a slightly sweeter sauce. Always cut in squares.
Original Neapolitan pizza recipe
Ingredients
- 1 recipe St. Louis style dough
- 90 ml Neapolitan pizza sauce
- 1 tsp Sugar
- 200 g Provel cheese (shredded)
- 100 g Sweet Italian sausage (crumbled, cooked)
- 0.5 Green bell pepper (sliced thin)
- 3 tbsp Hot giardiniera (drained, chopped)
- 1 tsp Dried oregano
Directions
- 1.Preheat oven to 260°C (500°F) with a pizza stone or baking sheet inside.
- 2.Roll St. Louis dough as thin as possible — nearly paper-thin. No resting required (no yeast). Dock all over.
- 3.Stir 1 tsp sugar into the sauce before spreading. The slightly sweeter sauce is characteristic of St. Louis style.
- 4.Spread sauce edge to edge. Top with shredded Provel cheese, cooked sausage, and thin-sliced bell pepper. Dust with oregano.
- 5.Bake 7–9 minutes until the crust is completely crisp and Provel is melted and beginning to bubble.
- 6.Cut into squares. Provel melts smoother than standard mozzarella — the cheese pull will be gooey and glossy.
